Pick up any packaged processed food, and there's a decent chance that one of its listed ingredients will be "natural flavour". The ingredient sounds good, particularly in contrast to "artificial flavours" since there is a common belief that ingredients from nature are necessarily safer than something artificially made. But it's not true. Then what exactly does the natural flavour mean? It refers to extracts (提取物) got from natural sources like plants, meat or seafood. When consumers see the "natural flavour" on a label, they are unlikely to assume that someone is squeezing the juice from oranges into their bottles. They know even though natural flavour must come from natural sources, it needn't all come from the plant or meat. For example, orange flavours might contain not only orange extracts, but also extracts from bark and grass.

So if flavours like orange are needed, why not just use oranges? The answer comes down to "availability, cost, and sustainability", according to flavour chemist Gary Reineccius of the University of Minnesota. "If you're going to use all your grapes on grape soda," Reineccius says, "you don't have any grapes for wine making; the products are going to be exorbitant; besides, what do you do with the by-products you create after you've squeezed all the juice out of the grapes?"

Actually, while chemists make natural flavours by extracting chemicals from natural ingredients, artificial flavours are made by creating the same chemicals artificially. The reason why companies bother to use natural flavours rather than artificial flavours is simple: marketing. "Many of these products have health titles," says Platkin, professor from Hunter College. "Consumers may be talked to believe products with natural flavours are healthier, though they are nutritionally no different from those with artificial flavours. Natural flavours may involve more forest clear-cutting and carbon emissions from transport than flavours created in the lab."

Platkin suggests getting more transparent (易懂的) labeling on packaging that describes exactly what the natural or artificial flavours are, so consumers are-not misled into buying one product over another because of "natural flavours". Reineccius also offers simple guidance: "Don't buy anything because it says ‘natural flavours'. Buy it because you like it."

    Life may have evolved on at least three planets within a newly discovered solar system 39 light years from Earth. Astronomers at the NASA have discovered no less than seven roughly Earth-sized worlds orbiting a dwarf star in the system. Scientists had previously identified a tiny number of "exoplanets", which are believed to have the qualities needed to support life. However, the new system contains an unprecedented(前所未有) number of Earth-sized, probably rocky planets, and is being acknowledged as an "accelerated leap forward" in the search for extraterrestrial (外星球的)life.

    Three of the new planets are said to be particularly promising because there might exist oceans. Thomas Zurbuchen, associate administrator of NASA, told a press conference in Washington: "This gives us a hint that finding a second Earth is not a matter of 'if', but 'when'."

    The planets were discovered using NASA's Spitzer Space Telescope, which was able to track how fast each of the planets crossed the star Trappist-l and completed an orbit. From this the research team calculated how far the planets were from their star, and therefore how likely they are to be habitable.

    NASA's Hubble Space Telescope is already being used to search for atmospheres around the planets. Future telescopes, including the proposed European Extremely Large Telescope and the James Webb Space Telescope, may be powerful enough to discover markers of life, such as oxygen in the atmospheres of exoplanets.

    Astronomers believe there could be as many as 40 billion potentially habitable worlds in our galaxy, the Milky Way. Prof Zurbuchen said that now was a "gold-rush phase" in the search for these exoplanets.

Forget Cyclists, Pedestrians are Real Danger

We are having a debate about this topic. Here are some letters from our readers.

■ Yes, many cyclists behave dangerously. Many drivers are disrespectful of cyclists But pedestrians are probably the worse offenders.

People of all ages happily walk along the pavement with eyes and hands glued to the mobile phone, quite unaware of what is going on around them. They may even do the same thing while crossing a road at a pedestrian crossing or elsewhere. The rest of us have to evade (避让) them or just stand still to wait for the unavoidable collision.

The real problem is that some pedestrians seem to be, at least for the moment, in worlds of their own that are, to them, much more important than the welfare of others.

■ I loved the letter from Bob Brooks about cyclists (Viewpoints, May 29). I am afraid they seem to think they own the roads.

I was walking across Altrincharn Road one morning when a cyclist went round me and on being asked what he was doing he shouted at me.

The government built a cycle lane on the road but it is hardly used.

The police do nothing. What a laugh they are!

The cyclists should all have to be made to use the cycle lanes and wear helmets, fluorescent (发荧光的)jacket and tights at night and in the morning. They should pay some sort of tax and be fined for not wearing them.

■ Cyclists jump on and off pavements (which are meant for pedestrians), ride at speed along the pavements, and think they have a special right to go through traffic lights when they are on red.

I was almost knocked down recently by a cyclist riding on the pavement when there was a cycle lane right next to him.

Other road users, including horse riders, manage to obey the rules so why not cyclists?

It's about time they had to be registered and insured, so when they do hit a pedestrian or a vehicle, or cause an accident, at least they can be traced and there might be an opportunity to claim.

    One morning, Ann's neighbor Tracy found a lost dog wandering around the local elementary school. She asked Ann if she could keep an eye on the dog. Ann said that she could watch it only for the day.

    Tracy took photos of the dog and printed off 400 FOUND fliers(传单), and put them in mailboxes. Meanwhile, Ann went to the dollar store and bought some pet supplies, warning her two sons not to fall in love with the dog. At the time, Ann's son Thomas was 10 years old, and Jack, who was recovering from a heart operation, was 21 years old.

    Four days later Ann was still looking after the dog, whom they had started to call Riley. When she arrived home from work, the dog threw itself against the screen door and barked madly at her. As soon as she opened the door, Riley dashed into the boys' room where Ann found Jack suffering from a heart attack. Riley ran over to Jack, but as soon as Ann bent over to help him the dog went silent.

     “If it hadn't come to get me, the doctor said Jack would have died,” Ann reported to a local newspaper. At this point, no one had called to claim the dog, so Ann decided to keep it.

    The next morning Tracy got a call. A man named Peter recognized his lost dog and called the number on the flier. Tracy started crying, and told him, “That dog saved my friend's son.”

    Peter drove to Ann's house to pick up his dog, and saw Thomas and Jack crying in the window. After a few moments Peter said, “Maybe Odie was supposed to find you, maybe you should keep it.”

    Why do so many tourists come to Easter Island? Because it has world-famous stone statues (雕像) . These statues, whose likenesses look like humans with huge stone cylinders(柱状物)balancing on their heads like hats, have tourists coming from all over the world. The tourists come to see these works of ancient art carved by the early inhabitants of the island. They come to see the mystery that has puzzled historians for decades.

    Easter Island is located in a remote part Of the South Pacific Ocean about 2,300 miles west of Chile. Easter Island covers just 45 square miles and its Polynesian name is Rapa Nui.

    On Easter Sunday 1722, a Dutch explorer named Jacob Roggeveen was the first European to see Easter Island. The early Polynesians carved the statues within the holes of the volcano (火山) using only stone tools. Then they moved these huge statues to various destinations throughout the island. These 600 statues range in height from 10 to 40 feet. Some of them weigh as much as 50 tons. How could the early Polynesians lift hundreds of heavy statues out of the volcano? How did they move them across the island to their various locations? All of these questions, as well as many others, remain unanswered.

    The early islanders probably worshiped (崇拜) these eyeless giants until sometime around 1670. In 1680, a war broke out between two groups of islanders. The victors(胜利者)of the war and ancestors of the present inhabitants, broke down many of the statues. In most cases, they broke the necks of the statues.

    Now 15 of the statues on Easter Island have been repaired to their original positions on their stone platforms. Even today, using modern tools and machinery, putting up such large statues and balancing cylinders on top of their heads presents a challenging task.

    “Smombies” are very real and a growing cause for concern. Tired of having to constantly warn both locals and tourists to pay more attention to their surroundings to avoid serious accidents, authorities of a small German town have come up with a more positive solution — embedding (嵌入) traffic lights in the pavement to make them visible to people constantly looking down at their phones while walking.

    The seemingly ridiculous safety measure was put in place. Authorities in Augsburg decided to act, installing ground level traffic lights at two tram (有轨电车) stops last Tuesday. The lights flash red every time a tram is approaching, or when the regular traffic light turns red. “We realized that the normal traffic light isn't in the line of sight of many pedestrians these days,” said Tobias Hermes, a city administration official. “So we decided to have an additional set of lights — the more we have, the more people are likely to notice them.”

    Some Augsburg residents appear to be quite happy with the idea. “I think it makes sense,” said Jack Smith, “One always sees young people these days running over red lights. This makes it more obvious that you need to stop.” Others, however, found the need for ground traffic lights disturbing and even frightening. “I find it scary that smart phone users are so engrossed that they need to install lights in the ground so that they notice the tram coming,” one person told the local paper.

    But do this kind of pavement-embedded lights actually work? Well, if one interviewed teenager is to be believed, not really, “To be honest I didn't even notice it,” he said, “Maybe it'd be useful at night, but yeah, I didn't realize it was there until just now.”

    The word “smombie” — a mashup of the words smart phone and zombie — was born in Germany. It was voted “youth word of the year” in 2017, but the serious consequences of this behaviour are no laughing matter.

    Travis is the manager of G&G where he is responsible for forty employees (雇员)and profits (利润) of over $2 million per year. He's never late to work. He does not get upset on the job. When one of his employees started crying after a customer screamed at her, Travis took her away. "Your working uniform is your shelter," he told her. "Nothing anyone says will ever hurt you. You will always be as strong as you want to be."

    Travis picked up that lecture in one of his G&G training courses, an education program that began on his first day and continues throughout an employee's occupation. The training has, Travis says, changed his life. G&G has taught him how to live, how to focus, how to get to work on time, and how to master his emotions (情绪). Most importantly, it taught him willpower.

    At the center of that education is an extreme focus on an all-important habit; willpower. Dozens of cases show that willpower is the single most important habit for a person's success.

     And the best way to strengthen willpower is to make it into a habit. "Sometimes it looks like people with great self-control aren't working hard—but that's because they've made it automatic," Angela Duckworth, one of the University of Pennsylvania researchers said. "Their willpower occurs without them having to think about it."

     The company spent millions of dollars developing programs of study to train employees on self-control. Managers wrote workbooks that serve as guides to how to make willpower a habit in workers' lives. Those courses arc, in part, why G&G has grown from a sleepy company into a large one with more than seventeen thousand stores and profits of more than $10 billion a year.
