    Here's some good news for the foodies in the USA: One of China's most popular and fastest-growing restaurant chains is coming to the United States,and folks better watch out.This braised(炖,焖)chicken rice shop could upend a lot of competitors in the area.

    First opened in 2011,Yang's Braised Chicken Rice is definitely the new kid on the fast food block.However,the chain already has 5,000 locations globally,proving that they're perfect when it comes to speed,service,and flavor.

    They've even been compared to the most popular In-N-Out burger for their business model,swift output,and delicious food.Similar to the burger legend,Yang's specializes in just one item and does it right: Huang Men Braised Chicken Rice.The only customization you can make to this dish is the level of spiciness.Other than that,the base to every clay pot of this Shandong delicious food is the exact same.

    In fact,the recipe has barely changed over the past 80-plus years.That's because Yang's Huang Men chicken recipe is originally from the 1930s.Xiao Lu Yang,the founder of the new restaurant powerhouse,has inherited the recipe from his grandmother.He's made some slight changes,but otherwise it's the same chicken dish Yang's grandmother first sold in the 1930s.

    Yang first opened his namesake chain when he discovered the national popularity of Huang Men chicken served with rice,and it's still the only item sold in the chain's 5,000-plus locations.Many of those locations are in China,but some locations are in Melbourne,Singapore,and Japan as well.

    On September 10th,Yang's Braised Chicken Rice will open its first USA location in Tustin,California.Yang's sole menu offering,the Huang Men chicken with rice,sells for $9.99 per clay pot.Each pot comes with a generous helping of rice and chicken thighs(鸡腿肉)that braise with vegetables in Yang's secret sauce.The sauce is actually made in China and shipped to the US,meaning the flavor should almost perfectly replicate what Yang's sells in China.

    If you want to be one of the first people to taste the food in the US restaurant,make sure to reserve a spot for this September 10th grand opening.Otherwise,Yang's does plan to expand out to the rest of the country and beyond. Franchise offers have already come in from Chicago,Los Angeles,New York,and Canada.

    Next time you raise an eyebrow at the views of your partner, friend, sibling (兄弟姐妹) or colleague, remember they could be helping to make you smarter.

    New research shows that intelligence is not fixed but can be boosted throughout adulthood by family members, bright mates and intellectually stretching (拉伸) careers.

    The study challenges the commonly held belief that intelligence is static by the age of about 18. Current scientific consensus suggests that intelligence is controlled by genes, with environmental factors such as schooling and nutrition playing a partial role up to this age. After this point, IQ scores stabilize (稳定).

    But James Flynn, professor of political studies and psychology at the University of Otago in New Zealand, argues that people can “upgrade” their own intelligence throughout their lives. He believes intellectual stimulation (刺激) from others is crucial as the “brain seems to be rather like a muscle – the more you use it, the stronger it gets”. However, the opposite is also true – so people sharing a home or workplace with those who are intellectually challenged risk seeing their IQ levels fall as a result.

    He found the “understanding quality” of a family changes the IQs of all members, especially children. It can “lift” or hold back, depending on the “gap between their brightness and that of their siblings and parents”. A bright ten-year-old with brothers and sisters of average intelligence will suffer a five to ten point IQ disadvantage, compared to a similar child with equally bright siblings. However, children with a low IQ could gain six to eight points by having brighter siblings and special educational treatment to help pull them up.

    Professor Flynn also concluded that although genetics and early life experiences determine about 80 percent of intelligence, the remaining 20 percent is linked to lifestyle. This means that people can raise their IQ, or allow it to fall, by ten points or more. Therefore, the best way to boost IQ level is to mix with bright friends, find an intellectually challenging job and marry someone cleverer.

    Learning disabilities can be genetic. That means they can be passed down in families through the genes. But kids today have an advantage over their parents. Learning experts now know a lot more about the brain and how learning works, and it's easier for kids to get the help they need.

    Dyslexia is a learning disability that means a kid has a lot of trouble reading and writing. Kids who have trouble with math may have dyscalculia. Other kids may have language disorders, meaning they have trouble understanding language and understanding what they read.

    It can be confusing, though. What qualifies as “trouble" enough to be diagnosed as a learning disability? Reading, doing math, and writing letters may be tough for lots of kids at first. But when those troubles don't fade away and it's really difficult to make any progress, it's possible that the kid has a learning disability.

    Finding out you have a learning disability can be upsetting. You might feel different from everyone else. But the truth is that learning disabilities are pretty common. And if your learning specialist or psychologist has figured out which one you're facing, you're on the right track. Now, you can start getting the help you need to do better in school.

    But for this special help to really work, you'll need to practice the new skills you're learning. It may take a lot of efforts every day. That can be a challenge, but you can do it soon, you'll enjoy the results of all your hard work: more fun and success at school.

    March 3 marks World Hearing Day. This year's theme is “Check your hearing!” Many experts and health organizations, including those who pay attention to the hearing-impaired (听力障碍), are working to help people realize the importance of protecting their hearing and avoid hearing loss.

    When we talk about music, what kind of feelings does it bring? Excitement… and relaxation. But what if the music lasts for hours?

    We interviewed a group of musicians based in Beijing during the weekend. They all said that hours of exposure to loud music can cause discomfort. One added that band members like to play at maximum volume (音量) and forget the harm that loud music can cause. The same thing not only occurs to musicians. It's also not rare for daily users since listening to loud music on loud sound equipment has become a part of modem life. According to the WHO, the practice has put more than a billion people around the world, aged 12-35, at risk of losing their hearing.

    We also interviewed some headphone users in the street, and most of them said that they are not heavy users but admitted they use headphones for hours on the subway and in the office or home. It's easy for these people to gradually increase the volume without awareness, especially in a noisy environment. Often, headphone users fail to realize they're listening to audio at unsafe levels until serious hearing problems suddenly occur.

    There are many reasons for hearing loss, including loud acoustic (听觉的) sources, drug abuse, and diseases. Experts suggest frequent medical checks and prevention measures.

    Whether congenital (先天的) or acquired, loss of hearing is usually irreversible. “Once the hearing loss occurs, it's already too late to be changed back to what it was before,” said Yang Shiming, expert of the Chinese PLA General Hospital. “Early prevention, early identification and early treatment. If everyone could do these things, hearing loss and its harm could be kept to a minimum,” Yang said. Of course, this applies to every one of us.
