    Thousands of years ago, Britain was covered by thick forests, home to many animals which no longer live in the United Kingdom. But all this has changed. Now the population of the United Kingdom has increased to sixty-five million. Three-quarters of Britain consists of fields, towns or cities. Although 25 percent of land is countryside, new methods of farming mean that there are fewer birds and small animals living in fields than ever before. Now, the United Kingdom does not have large wild carnivores (肉食动物). In Scotland, there are only 400 wildcats-Europe's rarest cats-but these are much smaller than wolves.

    Some people would like to change things, however! Some organizations and writers say that Britain needs to become more natural again. They suggest that trees and plants that grew in the United Kingdom before towns and cities were built should be allowed to grow again. They even say that large wild animals which have not lived in the United Kingdom should be helped to return and live wild. They call this "rewilding".

    Not everyone agrees. In the last twenty years, over one million trees which originally grew in Scotland have been planted and there are plans for more - but wild animals? Some people ask if wolves will attack sheep or even humans. They are also angry that rewilding might mean an end to walking in the hills which so many people enjoy. So far, there are no wolves or bears in Britain's forests - but soon there might be!

    In fact,the recipe has barely changed over the past 80-plus years.That's because Yang's Huang Men chicken recipe is originally from the 1930s.Xiao Lu Yang,the founder of the new restaurant powerhouse,has inherited the recipe from his grandmother.He's made some slight changes,but otherwise it's the same chicken dish Yang's grandmother first sold in the 1930s.

    Yang first opened his namesake chain when he discovered the national popularity of Huang Men chicken served with rice,and it's still the only item sold in the chain's 5,000-plus locations.Many of those locations are in China,but some locations are in Melbourne,Singapore,and Japan as well.

    On September 10th,Yang's Braised Chicken Rice will open its first USA location in Tustin,California.Yang's sole menu offering,the Huang Men chicken with rice,sells for $9.99 per clay pot.Each pot comes with a generous helping of rice and chicken thighs(鸡腿肉)that braise with vegetables in Yang's secret sauce.The sauce is actually made in China and shipped to the US,meaning the flavor should almost perfectly replicate what Yang's sells in China.

    If you want to be one of the first people to taste the food in the US restaurant,make sure to reserve a spot for this September 10th grand opening.Otherwise,Yang's does plan to expand out to the rest of the country and beyond. Franchise offers have already come in from Chicago,Los Angeles,New York,and Canada.

    Freedom and Responsibility

    Freedom's challenge in the Digital Age is a serious topic. We are facing today a strange new world and we are all wondering what we are going to do with it.

    Some 2,500 years ago Greece discovered freedom. Before that there was no freedom. There were great civilizations, splendid empires, but no freedom anywhere. Egypt and Babylon were both  tyrannies, one very powerful man ruling over helpless masses.

    In Greece, in Athens (雅典), a little city in a little country, there were no helpless masses. And Athenians willingly obeyed the written laws which they themselves passed, and the unwritten, which must be obeyed if free men live together. They must show each other kindness and pity and the many qualities without which life would be very painful unless one chose to live alone in the desert.The Athenians never thought that a man was free if he could do what he wanted. A man was free if he was self-controlled. To make yourself obey what you approved was freedom. They were saved from looking at their lives as their own private affair. Each one felt responsible for the welfare of Athens, not because it was forced on him from the outside, but because the city was his pride and his safety. The essential belief of the first free government in the world was liberty for all men who could control themselves and would take responsibility for the state.

    But discovering freedom is not like discovering computers. It cannot be discovered once for all. If people do not prize it, and work for it, it will go. Constant watch is its price. Athens changed. It was a change that took place without being noticed though it was of the extreme importance, a spiritual change which affected the whole state. It had been the Athenian' s pride and joy to give to their city. That they could get material benefits from her never entered their minds. There had to be a complete change of attitude before they could look at the city as an employer who paid her citizens for doing her work. Now instead of men giving to the state, the state was to give to them. What the people wanted was a government which would provide a comfortable life for them; and with this as the primary object, ideas of freedom and self-reliance and responsibility were neglected to the point of disappearing. Athens was more and more looked on as a cooperative business possessed of great wealth in which all citizens had a right to share.

    Athens reached the point when the freedom she really wanted was freedom from responsibility. There could be only one result. If men insisted on being free from the burden of self-dependence and responsibility for the common good, they would cease to be free. Responsibility is the price every man must pay for freedom. It is to be had on no other terms. Athens, the Athens of Ancient Greece, refused responsibility; she reached the end of freedom and was never to have it again.

    But, “the excellent becomes the permanent”, Aristotle said. Athens lost freedom forever, but freedom was not lost forever for the world. A great American, James Madison, referred to: “The capacity (能力) of mankind for self-government.” No doubt he had not an idea that he was speaking Greek. Athens was not in the farthest background of his mind, but once man has a great and good idea, it is never completely lost. The Digital Age cannot destroy it. Somehow in this or that man's thought such an idea lives though unconsidered by the world of action. One can never be sure that it is not on the point of breaking out into action only sure that it will do so sometime.

    Recently some American scientists have given a useful sincere piece of advice to people in industrialized nations that they would be much healthier if they ate more of the same kind of food eaten by humans living more than 10,000 years ago.

    The scientists say that the human body has changed very little since humans first appeared on the earth, but the way we live has changed greatly. Our body has not been able to deal with (处理,对付)these changes in life style and this has led to new kinds of sicknesses. These new sicknesses were not known in ancient times, so they are called "diseases of civilization". Many cancers and diseases of the blood system, including heart attacks and strokes (中风) are examples of such diseases.

    Scientists noted that people in both the Old Stone Age and the New Stone Age enjoyed very little alcohol (酒精) or tobacco (烟草), probably none. Ancient people also got a great deal of physical exercise, but a change in food is one of the main differences between life in ancient times and that of today.

    Stone-age people hunted wild animals for their meat, which had much less fat than domestic or tame ones (家畜). They also ate a lot of fresh wild vegetables and fruits. They didn't have milk or any other dairy products, and they made very little use of grains. But today, we eat a large amount of these. We eat six times more salt than our remote ancestors (祖先). We eat more sugar. We eat twice as much fat but only one third as much protein (蛋白质) and much less vitamin C.

    People today probably do not want to live the way people thousands of years ago did, but scientists say that we would be much healthier if we ate much the same way as remote ancestors did, cutting the amount of fatty, salty and sweet food.

    Photos of the moon are beautiful if taken well, but it can be very hard to get a picture of the moon that doesn't look blurry! In order to take a perfect picture of the moon, apart from a high­quality camera, the associated equipment and the skills to set up your camera, you also need to pick a proper time and a good place.

    Choose your favorite moon phase. The moon can be photographed in any phase except the new moon, which is not visible to Earth. The first quarter, half, and third quarter phases provide high contrast that allows you to see the craters(坑) in greater detail, while the full moon is a dramatic choice for a skyscraper. What phase you choose is up to your personal preference, but it's best to have a phase chosen before going out to photograph the moon.

    Learn when the moon rises and sets. When the moon sets or rises, it is closer to the horizon, making it appear larger and closer. This makes it much easier to photograph! Check an almanac(年历) or a weather app for moon rising and setting times in your area.

    Pick a clear night. Clouds, fog, and air pollution will blur your photographs. Check a weather app or watch the weather forecast before leaving for your session and while photographing. A clear night with low smog content and no rain is best for moon photography.

    Choose a location away from direct light sources. The moon appears bright because it reflects the light of the sun, and additional light from streetlights, homes, and cars can make the moon appear duller and blurrier in pictures. It is fine if there is light in the distance, but be sure that you are not photographing close to another light source.
