Preparation: 1. Heat olive oil in a big pot. Put flour（面粉）, salt, and pepper on a plate. Cover half of the beef with the flour. 2. Cook the coated beef in the pot over medium—high heat for about 6 minutes until brown. Keep aside once browned. Repeat with the rest of the beef. 3. Pour in the beef broth（牛肉汁）and put all the beef back in the pot. Add enough water to cover the meat. Boil, then reduce to simmer（文火炖）. Cook until beef is soft, around 1 hour. 4. Add vegetables and simmer until beef and vegetables are soft, about 1 hour and 15 minutes.
