While Sichuan dishes are famous for its classic " numbing-hot (麻辣)" taste, Hunan dishes are known for being " hot" . Hunan people invented many ways to cook chili peppers. For example, they cut fresh chili peppers into small pieces and mix them with salt, they use these salted chilli to steam (蒸) fish heads. Then it has become a classical dish around the world.
Some say Hunan people love chili because they can help people get used to the damp (潮湿的) weather. The chili can drive away the dampness in one's body.
