    The highest beef prices in almost three decades have arrived just before the start of the hot season, causing a great shock to both consumers and restaurant owners—and relief isn't likely anytime soon. A decreasing number of cattle and growing export demand from countries such as China and Japan have caused the average price of fresh beef to climb to $5.28 a pound in February, up almost a quarter from January and the highest price since 1987.

    Everything that's produced is being consumed, said Kevin Good, an analyst at CattleFax, a Colorado-based information group. Prices will likely stay high for a couple of years as cattle producers start to rebuild their cattle among big questions about whether the Southwest and parts of the Midwest will see enough rain to water the grass.

    "I quit buying steaks a while ago when the price went up," said 59-year-old Len Markham, who works at Texas Tech. She says she limits red meat purchases to hamburger, choosing chicken, pork and fish instead.

    Restaurant owners, too, must deal with the high prices. Mark Hutchens, owner of the 50 Yard Line Steakhouse in Lubbock, raised his menu prices for beef items by about 5 percent in November. Since then, the owner of the small eating house has tried to make cuts elsewhere to avoid passing it on to customers. "It really puts more pressure on the small guys," he said of non-chain restaurants. "I just think you have to stay competitive and keep your costs low."

    “White-tablecloth restaurants have adjusted the size of their steaks, making them thinner”, says Jim Robb, director of the Colorado-based Livestock Marketing Information Center. “And fast-food restaurants are cutting costs by reducing the number of menu items and are offering other meat options, including turkey burgers, Robb said. Chain restaurants also try to buy beef as much as they can, which essentially gives them a discount”, Iowa State University assistant economics professor Lee Schulz said.

    The high prices are welcome news for at least one group: ranchers(大农场经营者), especially those in Texas who for years have struggled amid drought(干旱) and high feed prices. But even as ranchers breathe a sigh of relief, some worry lasting high prices will cause consumers to permanently change their buying habits — switching to chicken or pork. Pete Bonds, a 62-year-old Texas rancher and president of the Texas and Southwestern Cattle Raisers Association, said that's a big concern. “But such fears may be unfounded, Robb said. “Three years ago, economists thought consumers would start finding substitutions for beef as the drought spread. We're surprised we haven't seen more of that," he said.

    South Dakota rancher Chuck O'Connor thinks that consumers won't abandon beef for good. "I'm sure some are maybe going to cut back some, but to say that people aren't going to buy it anymore, I don't think that's going to happen," he said, adding, "I hope not."

    I had offered to watch my 3-year-old daughter, Ramanda, so that my wife could go out with a friend. I was getting some work while Ramanda appeared to be having a good time in the other room. No problem, I figured. But then it got a little too quiet and I yelled out, “What are you doing? Ramanda” No response. I repeated my question and heard her say, “Oh, nothing?” Nothing? What does “nothing” mean?

    I got up from my desk and ran out into the living room, and then I saw her take off down the hall. I chased her up the stairs and watched her a little behind made a hard left into the bedroom. I was gaining on her! She took off for the bathroom. Bad move. I had her cornered. I told her to turn around. She refused. I pulled out my big, mean, authoritative(命令式的)Daddy voice, “Young lady, I said turn around!”

    Slowly, she turned toward me. In her hand was what was left of my wife's new lipstick. And every square inch of her face was covered with right red (expect her lips of course)!

    As she looked up at me with fearful eyes, lips trembling, I heard every voice that had been shouted to me as a child. “How could you… you should know better than that… How many times have you been told…What a bad thing to do…”It was just a matter of my picking out which old message I was going to use on her so that she would know what a bad girl she had been. But before I could let loose, looked down at the sweatshirt my wife had put on her only an hour before. In big letters it said “I'M A PERFECT ANGEL!” I looked back up into her tearful eyes and instead to seeing a bad girl who didn't listen, I saw a child of God …a perfect little angel full of worth, value and a wonderful spontaneity(自发行为)that I had come dangerously closet shaming out of her.

“Sweetheart, you look beautiful! Let's take a picture so Mommy can see how special you look.” I took the picture and thanked God that I didn't miss the opportunity to reaffirm(再肯定)what a perfect little angel he had given me.

    There was a gardener who looked after his garden with great care. To water his flowers, he used two buckets(水桶). One was a shiny and new bucket. The other was a very old and dilapidated one, which had seen many years of service, but was now past its best.

    Every morning, the gardener would fill up the two buckets. Then he would carry them along the path, one on each side, to the flowerbeds. The new bucket was very proud of itself. It could carry a full bucket of water without a single drop spilled (溢出). The old bucket felt very ashamed because of its holes: before it reached the flowerbeds, much water had leaked(泄漏)along the path.

    Sometimes the new bucket would say, “See how capable I am! How good it is that the gardener has me to water the flowers every day! I don't know why he still bothers with you. What a waste of space you are!”

    And all that the old bucket could say was, “I know I'm not very useful, but I can only do my best. I'm happy that the gardener still finds a little bit of use in me, at least.”

    One day, the gardener heard that kind of conversation. After watering the flowers as usual, he said, “You both have done your work very well. Now I am going to carry you back. I want you to look carefully along the path.”

    Then the two buckets did so. All along the path, they noticed, on the side where the new bucket was carried, there was just bare (光秃秃的) earth; on the other side where the old bucket was carried, there was a joyous row of wild flowers, leading all the way to the garden.

Fat Is Good

It doesn't matter if you are part of the fat is GOOD for you or BAD for you group, the important question to ask is the source of the fat. If it comes from a land-based animal, and is likely to be solid at room temperature, then it is saturated (饱和的) fat whereas if it comes from fish or plants, and it is likely to be liquid at room temperature, then it is unsaturated fat. All the evidence indicates that eating more unsaturated fat than saturated fat lowers your risk of dying early.

Natural Sugar Is Better

The vast majority of sugar we consume is sucrose (蔗糖). It is the white powdered stuff we cook with and is made up of glucose and fructose. How about sugar from honey? It is often marketed as natural and better for you. Actually, it just has its own distinct flavour, but is as sweet because of glucose and fructose.

High-pH Water

Some people think we need to eat alkali (碱) food to maintain our blood at a pH of 7.4. But everything we eat or drink passes through the stomach, which, at a pH of 1.5, is the most acidic part of the body. It is then neutralised to a pH of 7. So, nothing we eat will change the pH of our blood.

Don't Eat Anything That You Can't Pronounce

Whether foods are natural or highly processed, they are all full of chemicals. Are you supposed to fear "phenylthiocarbamide", because you can't pronounce it? This is simply the chemical responsible for the bitter taste found in brassicas, the plants in the cabbage and mustard family.

Don't Eat Food With More Than Five Ingredients佐料

Simple foods are not necessarily healthier for you. If I, for instance, use Chinese five spice powder in a recipe, that would count as one of the five ingredients. However, what if I added the typical components of five spice powder separately into a dish? Does that mean my recipe suddenly becomes bad because it has more than five ingredients?

Adorned with naught but her cowl, apiarian instrument, and device for the emission of smoke, Kaye proceeds with a measured and deliberate gait. In contrast, I am excessively attired, having donned a comprehensive protective garment for our encounter. She advises me to shed the gloves I've brought along and directs me to a position that will minimize the agitation of the bees. Kaye's tender and cautious methodology instills a sense of calm in my presence among her charges. As our time together accrues, my admiration for Kaye's fervor for apiculture and the manner in which her auditory limitations have sculpted her distinctive methodology deepens.

In her vocation, she champions organic apicultural practices that minimize the utilization of chemical treatments. Moreover, she gathers all the requisite intelligence for the stewardship of the hives by depending on her non-auditory senses. Perhaps most notably, what renders Kaye an extraordinary apiarist is almost metaphysical. Excelling in her vocation is inextricably linked to adaptability, navigating the myriad uncertainties that emerge on any given day. Is precipitation excessive? Scarce? When will the flora reach full bloom? Will it yield a bountiful harvest of honey? She responds with alacrity, ensuring not to disrupt the bees' cadence and equilibrium.

"There is a profound, almost spiritual dimension to the craft of beekeeping," she remarked. "You cannot exert absolute dominion over them, akin to any element of the natural world, indeed. Some years bestow upon us an abundant honey harvest. Other years are fraught with adversity, resulting in the loss of half of the hive. There is considerable sorrow but also considerable delight, too, in simply toiling in the great outdoors with these sentient beings—a living, complex superorganism."
